Bedstraw (Gallim molluga)
We have been using the growing tips of wild madder in our salads since early spring. Now it is flowering and going by a different name: bedstraw. When you see the masses of blossoms along the roadside it is easy to see how it came to be used as a mattress stuffing. The flowers are nice in salads.

This poison ivy look-alike is one of my favorite summer salad greens. Take five minutes to spend with this plant and you will be richly rewarded. From the smallest leaves to the largest (and they can get enormous), texture and flavor remain palatable. Taste a variety of sizes. They are all a little sour and just a tiny bit bitter, but nonetheless different. Which do you like best? I use them all.

When Justine, Monica Jean, and I saw this poison ivy blooming along the Hudson River we were astonished at the profusion of blossoms. Until recently, poison ivy never bloomed in my area, yet, here it is, blooming and smiling. We will return for a photo of the berries that follow. Do not put this in your salad - Leave it alone and let it do its work: protecting the earth.
